I have been slacking lately on trying a good recipe when I find one. Mind you I’m a good cook, but between the millions of things I have going on, I don’t want to learn how to flambé; just give me something easy, affordable, that won’t make me feel like the Michelin Man when I consume it.
I had the chance to skim through one of my favorite books that has changed the way I look at eating tremendously, The Kind Life by Alicia Silverstone, and she has a recipe for hot chocolate! The recipe seemed pretty simple and I had all the ingredients in my kitchen, so I went for it! What I love about this recipe is that it’s vegan based ingredients. I love a challenge!
Here is her recipe:
1 cup soy/rice milk blend
1 teaspoon unsweetend cocoa powder
1 tablespoon non dairy chocolate chips
1/4 teaspoon of vanilla extract
1 teaspoon vanilla extract
1 teaspoon maple syrup
Optional toppings: vegan marshmellows, non-dairy whipped topping or chocolate shavings
Directions
Whisk milk, powder, chips, vanilla and syrup together in small saucepan. Place over medium heat, and cook until the chocolate chips are melted, whisking occasionally. Serve.
I’m allergic to soy milk, so I opted for Almond instead. I didn’t have non-dairy chocolate chips on hand and I also used light maple syrup. None the less, I still gave it a go.
The results:
After making this recipe, which was soooo easy to make, I refuse to buy those packets ever again. The results were so flavorful, yet not too too sweet. Don’t be thrown off by the maple syrup. It gives it a nice sweetness that you cannot taste. If you can boil water, you can pretty much make this recipe
It’s nice enjoying a cup on the sofa on these cold, 30 degree nights we’ve been having!
