Can you tell food has been on mind lately? Please don’t judge; it’s holiday time.
One of my co-workers shared with me a recipe she was eager to try in preparation of the Georgia Tech tailgate she was attending for “White Out”. When she showed me this link here to me, I could NOT believe what I saw. Chicken and waffles?! Really?! I was too excited.
Now for those of you that are not from/reside/migrate to the deep south, you would not be understand or appreciate the goodness of a plate of Chicken and Waffles. It is a dish that is pretty well known and famous here. I had no clue what the big deal was until I had the chance to try it. If Heaven served food, that would be on the menu. Okay, back to the story.
So to my surprise, my co-worker made the cupcakes, but she ended up with 3 dozen cupcakes, and decided to share. ::fans self:: Okay, first off, my co-worker is a BEAST when it comes to baking. She is really good at it. Second, I was so nervous about eating this because I don’t eat fried foods anymore and I wasn’t sure what the calorie count was. So as a result, she and another friend decided to split the cupcake 3 ways so I could at least give it a try. LOL Hey, gotta keep the girlish figure.
The results:
These cupcakes were moist, rich, and full of flavor! Don’t knock it ’til you try it. Hey and if you’re a newbie at Chicken and Waffles and you’re ever in Atlanta, please stop by Gladys Knight’s Chicken & Waffles and order the Midnight Train. It will make your taste buds sing!
