Happy Independence Day
Bahamas!!!!
Today the beautiful Islands of the Bahamas celebrates its 38th year of independence. My father’s native land is filled with beautiful weather, trees, and beaches lined with white sand and seas the same turquoise color of their country’s flag. It’s truly a place I’d love to be right now.
To celebrate, I called my Granny, born and raised in the Bahamas, also to ask her for her infamous Pigeon Peas and Rice recipe. The recipe is no secret; whatever magic my Granny uses to taste like she makes it is. She chuckled when I told her I wanted to try it and gave me the list of items she uses to make it. The recipe is easy to make…the challenge is making it taste like hers.
With these ingredients, a phone call to my granny to make sure I was doing it right, and a lot of nail biting later, my rice came out perfect! I baked some chicken and made a tossed salad with it.
